Easy Egg Custard- No Custard Powder Custard!

This is the easiest easy egg custard- no custard powder custard around! In my mind making custard is a basic skill that should be easy to master but for whatever reason, it is the one thing I really struggle to make. I have tried SO MANY recipes, all of which have never worked. Yes, I have even failed at making custard with custard powder before, how embarrassing is that!

I was talking to a dear friend one day about my custard track record. How my family all let out a type of groan when I announce that I am making custard as I have ended up with scrambled egg custard and extremely watery custard in the past, she looked at me puzzled and said that it is so simple to make. She gave me this recipe and told me that there was no way I could possibly fail at making this custard. Turns out custard is SO EASY to make, you just need to use this recipe! It is seriously too good not to share.

Easy Egg Custard- No Custard Powder Custard!

Serves 4.

This recipe is easy to half or double depending on how many people you need to feed and how hungry they are. This will give four large portions the size pictured. There is no need for electric beaters here, just use a fork or a hand whisk.

Ingredients

  • 2 cups milk, plus a little extra
  • 2 egg yolks
  • 2 Tblsp cornflour/statch
  • 2 Tblsp sugar

Heat milk in the microwave until it is scalding. While the milk is heating in a separate bowl or cup whisk together the egg yolks, a tablespoon or two of milk and the cornflour and sugar until a paste forms.

Remove milk from the microwave and carefully add the egg mixture and whisk together the mixture should start to thicken slightly.

Return to the microwave for 30 seconds and whisk again. Continue this until your custard has reached the desired thickness.

Great served with fruit or alongside pie!
