Easy Coconut Loaf

In our home, this easy coconut loaf never lasts for long! It is fantastic with a cup of tea or coffee and is the perfect addition to school lunchboxes. This is one of my go-to recipes when I feel like doing some baking but have loads of other things going on so don’t have much time free to be in the kitchen.
Making this recipe is very simple. Combine the coconut, flour, sugar, and baking powder before mixing in the milk. Start off using 1 cup of milk but add a little extra if the mixture is looking too thick. You want it to be able to fall off the spoon as a batter-like consistency but not be too thin. Bake in the oven for approximately 1 hour and then sit down to relax with a slice of coconut loaf.
What is desiccated coconut?
Desiccated coconut is coconut flesh that has been flaked or shredded and dried. It has a finer texture compared to shredded coconut. Desiccated and shredded coconut is from the same part of the coconut so if you find that you have shredded coconut in your panty a good option would be to put it in the blender/ food processor to make it finer to give the loaf the desired texture. This mini food processor is the perfect size for small jobs like this.
Easy Coconut Loaf
Ingredients
- 1 1/2 cups desiccated coconut
- 1 1/2 cups flour
- 1 cup sugar
- 2 tsp baking powder
- 1 to 1 1/2 cups milk
Instructions
- Preheat oven to 180°C/ 350°F.
- Prepare a loaf tin by spraying it with oil and lining it with baking paper.
- Add all of the dry ingredients to a large mixing bowl.
- Add 1 cup of milk and stir. You want a batter-like consistency so it is thick but still falls off the spoon. If it seems too thick then add in more milk and stir again.
- Pour into the loaf tin and back for 1 hour until browned and cooked.
