These cookies are soft and almost melt-in-your-mouth delicious. Growing up I loved to bake (and still do) and these cookies were a regular feature. Made in just one saucepan they are quick and easy and totally delicious. We love to put sultanas on these cookies as the flavor really works well together but you could swap the sultanas for raisins, dried cranberries, or even chocolate drops.

If one sultana on top isn’t enough then feel free to add more. Another tasty alternative would be to try mixing some sultanas through the cookie dough. If you do please drop us a message below to let us know how they turned out! We keep it simple with just the one sultana as our family like the balance of flavors that brings.

The process of making these cookies is very simple. Add the butter, honey, and sugar to a saucepan and melt. Next, add the dry ingredients and roll them into balls. Place onto a greased or lined oven tray. Flatten with a fork, add a sultana, and bake. These cookies need to be flattened as they stay the flattened shape when baked. Once baked, leave to cook and eat.

If you are looking for a great alternative to parchment paper then these reusable RENOOK Silicone Baking Mats are a must. After use, Just use the dishwasher or just rinse the silicone mat in warm soapy water to clean it. So simple and you will never have to worry about running out of baking/ parchment paper again.
