Not only do our girls both love this meal it is super quick to make so perfect when my cooking motivation is low. It can even be made during the day so all that needs to be done is for it to be taken out of the fridge and put into individual bowls/ plates after a busy evening with kids’ activities or working late.

In some countries such as New Zealand and Australia, it is called Risoni here but many other countries in the world call it orzo. Risoni may look like large rice however it is actually pasta!
Chicken Pesto Risoni Salad
- 250g Pasta Risoni
- 260g Shredded Roast Chicken
- 140g Pesto
- 200g Feta
- 70g Pine Nuts
- 1 punnet Cherry Tomatoes
- 60 g Baby Spinach Leaves
- 1. Cook the pasta risoni as per packet instructions.
- 2. Halve the cherry tomatoes and cut the feta into 1cm cubes.
- 3. Once the pasta is cooked, drain any excess liquid.
- 4. In a salad bowl, combine the pasta, chicken and pesto.
- 5. Fold through the spinach leaves, cherry tomatoes, feta, and pine nuts.
